Meatloaf Pillows


Gray was a bit skeptical when I described what these were but then he loved them! We both agreed that this seems very kid friendly because they could eat them with their hands, guess we will find out if they are or aren't soon enough :)
I found this recipe on Gather Round Our Table.


12 oz. tube refrigerated biscuits
1 1/2 lb. ground beef
1 c. ketchup
1 c. ketchup, divided
1/2 c. onion, chopped
1 egg, beaten
1/4 c. quick-cooking oats, uncooked
1 c. shredded cheddar cheese

Separate and press biscuit dough into the bottom and up the sides of 10 greased muffin cups (I put them in the muffin liners because our muffin tin is old and scraped up). Combine ground beef, 1/2 c. ketchup, onion, eggs and oats. Mix well and form into 10 meatballs; place one meatball into each biscuit cup. Spread remaining ketchup on the top of each meatball. Sprinkle with cheddar cheese. Bake at 350 degrees for 30 minutes.
